“Flies” covers several pests that breed in completely different places, and naming the right one is the entire diagnosis. Fruit flies are small and hover over produce, spills, and recycling, breeding in fermenting organic matter. Drain flies are small and fuzzy, rest on walls near drains, and breed in the gel inside floor and sink drains. Phorid (humpbacked) flies run rather than fly and breed in deep organic sources — a cracked sewer line, a dead rodent in a wall, decaying matter under equipment — making them a sanitation red flag. House and blow flies are large, gather at windows, and breed in garbage, waste, and carrion. Cluster flies are sluggish and appear in numbers indoors in fall as they overwinter. Treat them all the same way and you solve none of them.
The defining mistake in fly control is treating the air instead of the source. We use the species, the location, and the pattern to track activity back to the breeding site: cameras and inspection for drain and phorid sources, sanitation review for fruit and house flies, and structural inspection where a phorid trail suggests a sewer break or a dead animal in a void. Removing or remediating that source is what ends the cycle — everything else is temporary.
New York gives flies a head start. Curbside trash through the warm months, shared garbage and recycling rooms in apartment buildings, aging drain lines in older construction, and the sheer density of food businesses all create constant breeding pressure. In multi-unit buildings a fly source in one unit or a shared trash room drives flies through the whole building, so we look beyond the single apartment when the pattern calls for it. For restaurants, fly pressure from drains and waste is both a nuisance and an inspection risk.

By size, behavior, and where they gather. Small flies hovering over fruit and the recycling are fruit flies; small fuzzy ones on bathroom and basement walls near drains are drain flies; small ones rising from a slow, persistent source near rot or a sewer leak are phorid (humpbacked) flies; large flies bumping windows are house flies or, if sluggish and clustered in fall, cluster flies. Each breeds in a different place, so identifying the fly is how we find the source.
Because the adults you swat are a fraction of the population — the rest are eggs and larvae developing in a breeding site you have not found. Sprays and traps knock down adults for a day. Until the organic source is located and removed (a drain film, a forgotten potato, a dead animal in a wall, rotting waste), a new wave hatches. We hunt the source.
Anywhere moist organic matter sits: floor and bar drains, mop sinks, the slime under equipment, garbage and recycling, overwatered plant soil, a fruit bowl, a grease trap, or — for phorid flies — a broken sewer line or a dead rodent in a void. In NYC, summer trash on the curb and shared garbage rooms in apartment buildings are major outdoor drivers.
No, and the fix is different. Fruit flies breed in fermenting produce, spills, and recycling and respond to sanitation of those sources. Drain flies breed in the organic gel inside drains and require cleaning or treating the drain itself — a fruit-fly approach will not touch them. Misidentifying one for the other is the most common reason fly problems drag on.
Yes. House flies and blow flies move between waste and food surfaces and can mechanically spread bacteria, which is why they matter so much in food businesses. Phorid flies emerging from a sewer break or a dead animal are also a sanitation red flag. Beyond nuisance, persistent flies in a kitchen are a documentation and inspection risk.
